“Use of food” recipe

Make use of your food with this recipe. We had some vegetables in the fridge that need to go. This recipe can contribute to reduce food losses and wastage. We cooked two versions, one with butternut squash and one with sweet potato.

IMG_20180312_152456🥔Sweet Potato or Butternut Squash in halfs, put into the oven, mid heat till cooked (optionals can be done with aubergines, pumpkins, etc.). Carving them and leave the mash apart.
🍚Cook some quinoa (or any other cereal like brown rice, millet, pasta, brown couscous…).
🍅Saute onions, leeks, courgette and garlic till soft, add some chopped tomatoes, kale leaves, spinachs… (any veggies you have at home is completely fine).IMG_20180108_143053
🍳Finally mix with the mash (of sweet potato or butternut squash) and stir well, salt, pepper, cumin, paprika and turmeric. Add the cereal you chose (quinoa or coucous) and put into the carved halfs.

So tasty! They look so great that this is a great choice to impress your friends and family with real food.

Mexican Tortillas


It is very easy to make MEXICAN TORTILLAS at home. They are so tender, chewy and simple, you’ll never use store-bought again! however, if you are avoiding transgenics (GMO) go for organic corn flour. It is very important to know this because most of the cornflour we can find in the market nowadays it is GMO for sure. 

Corn flour Tortillas are gluten free so people with coeliac disease or any other gluten problem can eat them, hurray!

-1 cup organic corn flour
-1/2 cup water
-1 tsp salt

In a large bowl combine flour and salt. Stir in water. Knead 10 minutes to achieve a smooth dough. Divide dough into 3 portion-balls. Roll each ball between two cooking papers, take them off carefully and place them in a hot pan.
Cook tortillas over medium heat untill lightly browned.

Ingredients for the tortillas filling:

•4 chopped radish


•1/2sprint onion

•1 tomato

•1/2lemon juice

•fresh chopped coriander

•olive oil

•salt and pepper

1. Get the guacamole by mixing all the chopped veggies plus lemon juice, olive oil, pepper and salt.
2. Place the TORTILLAS on a plate with the guacamole, carrot and radish on top. Add some green leaves as much as you like. 

This is a perfect choice for lunch, but also can be a lovely dinner. Give it a try and let us know what you think! you are gonna love them…

Wild Garlic Pesto

IMG_20170406_200227_520Wild garlic has definitely become more and more popular over the years as an ingredient in the home kitchens.

Spring fresh wild garlic pesto is tasty, easy and quick!! And super healthy of course…

-100 gr. fresh wild garlic.ajo-de-oso-propiedades-medicinales
-60 gr. Parmesan cheese.
-80 gr. Roasted cashews (we roasted in the oven, it is so quick!)
-olive oil (extra virgin, please)
-little bit of lemonjuice
-half garlic clove
-salt and pepper

Blend all together to get the perfect pesto consistency, add some more olive oil if needed. And enjoy!
Why is wild garlic good for you?
Given its antibacterial, antibiotic, antiseptic and anti … well, just about everything, properties, it makes sense to pack as much into your diet as you can. Although all garlic has this property, wild garlic has the greatest effect on lowering blood pressure. What else you need? go for it and tell us!

Wholemeal spelt and rye bread (easypeasyer ever)


This bread doesn´t need any kneading or a bread-maker and that is why it is so easy-peasy. Your are going to love this recipe!

I always wanted to have homemade bread at home but I never went for it until I changed my diet for a healthier one. I am a bread lover, I did not want to get by without it. Then I did some research online. Most of the recipes out there were too complicated or too hard to knead… till I found the perfect one in an Spanish blog: Quick and easy spelt and buckwheat bread (Spanish). It sounded ideal to me, I tryed it right away and it was a desaster first time but second one it was amazingly succesful!!! So do not discourage in case first bread is disgusting.

Since then til now have been adding and taking off ingredients from the original recipe so the bread that I am showing here is quite easier to achieve and super tasty. Even a child could bake it!


  • 300 gr organic wholemeal spelt flour
  • 100 gr organic wholemeal rye flour
  • 8 gr dry yeast (or 21 gr fresh yeast)
  • 400 ml filtered water
  • 1 tsp salt
  • 2 tbsp vinegar (I always use apple vinegar)
  • 1 tbsp honey (optional)
  • seeds (optional) -I use sunflower seeds and sesame seeds-

Dilute the yeast, salt, v030029bb (2)inegar and honey into the water. Pour this into the flours and seeds. Use a wooden spoon, folk or silicone spatula to mix well all together. Then cover the dough with a cloth and leave it for one hour or two next to a heat source (a warm heater for example). After that, place the dough into the mold you are going to use for baking. In case it is not a silicone one, you will have to oil it. Cover with a cloth again and leave it for one hour more or less. If you are in a rush, you can skip this step and pour the dought straight away into the oven. However, it is worth putting in the time to do this as it will pay off later with lovely airy bread. Actually, if you don´t wanna wait for fermentation, you can mix the ingredients before bed and leave the dought into the fridge overnigh. The mixture will be ready for baking in the morning! This process is called slow fermentation.

Preheat the oven 200 ºC and get into a tray with some water to obtain a crunchy crust. Dust the loaf with flour. Bake for 50 mins until golden brown and the loaf sounds hollow when tapped underneath. After that, leave it for 10-20 minutes low heat.

Timing and temperature may vary based on the kind of oven you have. My oven is an old  lower gas one, however it bakes an amazing bread.

You can bake a bigger bread just doubling ingredients. We are only two at home, we like just baked bread so it is more accurate the smaller version what it lasts two or three days.

Almond drink

Here in EnglishAlmondMilk

Easy, quick and super tasty almond milk or almond drink. Just soak the almonds during 8 hours. We usually leave them the whole night in water and then you can drink fresh milk in the morning.


  • A handful of almonds.
  • Filtered water.
  • Salt.
  • Dates, coconut sugar o cinnamon (optional)
  • Cocoa (optional)

Soak the almond the whole night. Blend them in the morning with a little more of water. Add some coconut sugar, dates or cinnamon if you feel like. Then pour the mix into a cloth and filter the liquid through it. You have to squeeze or “milk” the cloth until there is no more liquid leaking.

The leftovers or the almonds can be reused to make cream cheese, sponge cake, cookies or just to dress your salads with some lemon and olive oil.

Blackberries and Oats Smoothie


I wake up today with this feeling, my body needed good energy. I remember I had some frozen blackberries in my fridge so I went for an oats and berries smoothie.



  • A handful of oats -soaking the whole night-
  • A handful of blackberries -frozen or fresh-
  • A banana
  • A glas of cashew drink (any vegetable milk is suitable)

Mix all together in to the blender and enjoy!

Milk bread no sugar no flour!!

This easy peasy milk bread can be made by normal milk (powder milk) or any milk alternatives. I used powder almond milk ECO MIL. Any Whole Foods Market sells it.


  • 18 tbsp powder almond milk (cow, goat, soya… any!).
  • 4 eggs.
  • 2 tsp dry yeast.
  • Cinnamon, vanilla or seeds to taste.
  • 350-400 g blueberries (any berries are fine)

Mix all the ingredients very well. Leave apart the blueberries. Preheat the oven 180 ºC. Add the blueberries to the mix and pour it into the baking cases (mine were silicone cases, they work much better). Put in to the oven for 25 minutes. According to your oven, temperature and timing could change.

Check if  your milk bread is done. When you insert a cocktail stick into the center of the bread, it should come out clean, with no streaks of batter. A few small crumbs are ok! Leave it getting cold and enjoy!
