This a great recipe for summer time! very very tasty, nutritional and easy peasy!
For 1 litre of Gazpacho: 1K tomatoes, a little onion, a pepper, a garlic clove and 2 cucumbers.
In food processor, process all the ingredients for a few minutes to make a smooth puree. Add some Virgin Extra Olive Oil, salt, vinegar and stir well to mix . Cover and refrigerate for 3 hours or the whole night. Hope you like it!
