“Use of food” recipe

Make use of your food with this recipe. We had some vegetables in the fridge that need to go. This recipe can contribute to reduce food losses and wastage. We cooked two versions, one with butternut squash and one with sweet potato.

IMG_20180312_152456🥔Sweet Potato or Butternut Squash in halfs, put into the oven, mid heat till cooked (optionals can be done with aubergines, pumpkins, etc.). Carving them and leave the mash apart.
🍚Cook some quinoa (or any other cereal like brown rice, millet, pasta, brown couscous…).
🍅Saute onions, leeks, courgette and garlic till soft, add some chopped tomatoes, kale leaves, spinachs… (any veggies you have at home is completely fine).IMG_20180108_143053
🍳Finally mix with the mash (of sweet potato or butternut squash) and stir well, salt, pepper, cumin, paprika and turmeric. Add the cereal you chose (quinoa or coucous) and put into the carved halfs.

So tasty! They look so great that this is a great choice to impress your friends and family with real food.

Mexican Tortillas

It is very easy to make MEXICAN TORTILLAS at home. They are so tender, chewy and simple, you’ll never use store-bought again! however, if you are avoiding transgenics (GMO) go for organic corn flour. It is very important to know this because most of the cornflour we can find in the market nowadays it is GMO for sure. 

Corn flour Tortillas are gluten free so people with coeliac disease or any other gluten problem can eat them, hurray!

Ingredients:
-1 cup organic corn flour
-1/2 cup water
-1 tsp salt

In a large bowl combine flour and salt. Stir in water. Knead 10 minutes to achieve a smooth dough. Divide dough into 3 portion-balls. Roll each ball between two cooking papers, take them off carefully and place them in a hot pan.
Cook tortillas over medium heat untill lightly browned.

Ingredients for the tortillas filling:

•1 grated carrotIMG_20170506_141235_549

•4 chopped radish

•1/2avocado

•1/2sprint onion

•1 tomato

•1/2lemon juice

•fresh chopped coriander

•olive oil

•salt and pepper

1. Get the guacamole by mixing all the chopped veggies plus lemon juice, olive oil, pepper and salt.
2. Place the TORTILLAS on a plate with the guacamole, carrot and radish on top. Add some green leaves as much as you like. 

This is a perfect choice for lunch, but also can be a lovely dinner. Give it a try and let us know what you think! you are gonna love them…
